Product Overview

Edelweiss Estate Coffee is a specialty-grade Arabica grown on the volcanic slopes near the Ngorongoro Highlands in northern Tanzania. Cultivated in nutrient-rich volcanic loam and cooled by high-altitude conditions, the coffee develops exceptional complexity and structure.

The farms are located in the Oldeani region of Karatu, bordering the Ngorongoro forest ecosystem and surrounded by open savannah. This unique environment produces beans with bright character, balanced body, and refined aromatic depth.

Each batch is carefully harvested, processed on-site, and roasted in small quantities to maintain consistency and freshness.

Growing Environment

The coffee is cultivated on south-westerly facing slopes formed by volcanic soils originating from the Ngorongoro Crater region. The farms lie within a biodiverse highland ecosystem connected to the greater Serengeti landscape, where wildlife corridors pass through surrounding savannah plains.

Cool temperatures and high elevation slow bean maturation, producing denser cherries with concentrated flavor compounds.

Processing

All cherries are selectively hand-picked at peak ripeness.

  1. Cherries are pulped immediately after harvesting.

  2. Beans are fermented for 36–54 hours depending on ambient temperature.

  3. Fermentation continues until the mucilage breaks down to the correct pH (~4.2).

  4. Beans are washed in fresh spring water.

  5. Drying occurs 2 days under shade followed by approximately 10 days of sun drying until reaching ~12% moisture.

This controlled washed process preserves clarity and brightness in the cup.

Roasting

Every lot is quality tested before roasting. The beans are roasted in a 30kg Probat roaster to ensure consistency and full flavor development. The coffee is packed immediately after roasting to maintain freshness.
