Tanzania pure arabica coffee - medium specialty roasted coffee
Tasting profile: Citrus, bakers chocolate, bright acidity, balanced, pleasant and refreshing  aftertaste.

Origin & environment: Oldeani, Karatu district, Tanzania, Adjacent to Ngorongoro forest, an isolated highland region surrounded by savannah plains and a part of the Serengeti ecosystem. The farms also house an abundance of wildlife corridors for migrating game from the neighbouring national park.TASTING PROFILE
Citrus, bakers chocolate, bright acidity, balanced, pleasant and refreshing aftertaste.
TERROR
Volcanic loam that is free draining. South westerly facing slopes off the Ngorongoro Crater bordering the indigenous forest.
ORIGIN & ENVIRONMENT:
Oldeani, Karatu District Tanzania. Adjacent to Ngorongara Forest, an isolated highland region surrounded by savannah plains and a part of the Serengeti ecosystem. The farms also house an abundance of wildlife and maintain wildlife corridors for migrating game from the neighbouring national park.
VARIETALS:
SL 28, Bourbon, Kent, Geisha, Pacamara, Batian
PLANTATION:
Coffee originates from 2 neighbouring farms, Edelweiss and Gaia farm. Topography is very steep slopes and a latitude of 3.3 'S. The altitude ranges from 1650m to 1850m, a good altitude for specialty coffee growing as the berries have a longer and more intense ripening and become more concentrated due to the extreme temperature differential.
PROCESSING
This coffee is processed on site. The ripe coffee berries were picked when they turn dark red and the picked berries are then taken for depulping immediately. The parchment coffee was then dry fermented in open tiled tanks for 36-54 hrs depending on ambient temperatures and we allow the pil to reach 4.2, a signal that the mucilage layer is adequately broken down. The coffee underwent washing and grading in fresh spring water to remove the mucilage. The wet parchment was dried under shade for 2 days and then sun dried for a further 10 days until it reached 12% moisture content.
ROASTING
Every lot is tasted for quality and selected to maintain a consistent taste profile. The coffee is roasted in our 30kg Toper Roaster and then packed fresh.
