Topography is very steep slopes and a latitude of 3.3 'S. The altitude ranges from 1650m to 1850m, a good altitude for specialty coffee growing as the berries have a longer and more intense ripening and become more concentrated due to the extreme temperature differential.\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003ePROCESSING\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eThis coffee is processed on site. The ripe coffee berries were picked when they turn dark red and the picked berries are then taken for depulping immediately. The parchment coffee was then dry fermented in open tiled tanks for 36-54 hrs depending on ambient temperatures and we allow the pil to reach 4.2, a signal that the mucilage layer is adequately broken down. The coffee underwent washing and grading in fresh spring water to remove the mucilage. The wet parchment was dried under shade for 2 days and then sun dried for a further 10 days until it reached 12% moisture content.\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eROASTING\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eEvery lot is tasted for quality and selected to maintain a consistent taste profile.
